Stewed apples with cinnamon is a Winter’s day treat that can warm you from the inside out. I also love to add blueberry and ginger to increase the earthy and sweet flavours.
It goes perfectly with so many things. The good dose of ginger can do you wonders if you have a cold too.
I make this little accompaniment often. It’s delicious with a dollop of coconut yoghurt and a sprinkle of flaxseeds. But it also goes perfectly on top of pancakes, granola or porridge for a weekend breakfast.
If fresh blueberries are prohibitively expensive at the time of making, you can also use frozen…. it’s equally delicious. The combination of apple and blueberry is divine but you can use any berries you have on hand.
How to make stewed apples with cinnamon + blueberries
This is a very easy recipe; it just requires a little time on the stove.
It’s as simple as putting chopped apple, blueberries, cinnamon and ginger in a pot along with some coconut milk. Once that’s done you simmer for 30 – 40 minutes until the fruit has softened.
You can use any coconut milk you like but my preference is Honest to Goodness. I have no affiliation with them, I just love the flavour and creaminess it adds to this dish.
The recipe will serve one to two depending on what you’re going to be serving it with. If its just a snack to be enjoyed on it’s own it will serve one.
What are the health benefits?
Aside from being an utterly delicious combination, these ingredients are also extremely beneficial for our health.
Apples and blueberries are both rich in antioxidants that help protect against free radical damage. Free radicals can occur in the body as a result of:
- Ongoing exposure to pollution
- High volumes of stress or inflammation and also;
- Insufficient sleep.
Additionally, they’re rich in prebiotic fibre, which helps to keep our digestive system and microbiome balanced and healthy. And of course, they’re a great source of vitamins to boot.
Cinnamon is a wonder ingredient and one I love to use often. You can find it in my lacto-fermented fig, cinnamon and honey butter too. Aside from being rich in antioxidants, it’s also anti-inflammatory, aids digestion, can help to balance blood sugar and helps to fights off sugar cravings. A great food as medicine bowl to get your day underway.
Stewed apples with cinnamon + blueberries
- Small saucepan
- 1 large red apple
- ½ cup blueberries
- ½ cup coconut milk, or your milk of choice
- ½ tsp cinnamon
- 1 small knob of ginger, grated
- A little raw honey to drizzle
- Peel and core the apple then cut it into bite-sized pieces
- Add the apple to a small saucepan with the blueberries, coconut milk, cinnamon and grated ginger
- Turn the heat on low and simmer for 30 – 40 minutes or until the fruit is soft
- Serve over porridge, granola, or eat as is with a little more warmed coconut milk and a good drizzle of raw honey.
