- 1 large red apple
- ½ cup blueberries
- ½ cup coconut milk, or your milk of choice
- ½ tsp cinnamon
- 1 small knob of ginger, grated
- A little raw honey to drizzle
Prevent your screen from going dark
Peel and core the apple then cut it into bite-sized pieces
Add the apple to a small saucepan with the blueberries, coconut milk, cinnamon and grated ginger
Bring to a rolling simmer (just before a boil) then reduce the heat to low and simmer for 10 - 15 minutes or until the fruit is soft
Serve over porridge, granola, or eat as is with a little more warmed coconut milk and a good drizzle of raw honey.
